Falafel Crackers

When you get the feeling that rice crackers are just a health and environmental hazard with all that packaging for very little nutrition, here’s a great option. Falafel crackers! 

This is the basic recipe from the Thermomix community. I vary it depending on what nuts and seeds I have in the pantry and find a combo of nuts and seeds that = 220gm. Note that chia and flaxseeds are slightly estrogenic so you may want to replace them if you have and estrogen dominant hormonal condition. You can also add chopped kale leaves, fresh herbs and vary the dry spices.

Ingredients: 

  • 1 garlic clove
  • 20 g chia seeds
  • 50 g sunflower seeds
  • 50 g pepitas
  • 50 g sesame seeds
  • 50 g flaxseeds (linseeds)
  • ½ tsp ground cumin
  • ½ tsp ground turmeric
  • 1 tsp dried oregano
  • 1 tsp salt
  • 35 g water
  • 25 g olive oil

Grind up the garlic clove in the TM or chop by hand. Grind up the seeds, spices, herbs and salt until it resembles a coarse powder. Add the oil and water and blend to make a dough.

On a large baking tray, roll out the mixture with a rolling pin or wine bottle and score into squares. Bake at 160 deg for 20 mins until lightly browned.

Serve with pate, nut butter or dip.
